CHEF STEFANO
Chef Stefano Quaresima is a versatile culinary expert, fluent in Italian, French, English, and Spanish, and skilled in preparing a wide array of cuisines. Born in Rome to a French mother and an Italian father, Stefano's multicultural upbringing has deeply influenced his approach to cooking. He honed his craft at culinary school in Italy before embarking on an international cooking career that has spanned across Italy, France, Greece, Crete, the Maldives, the United Kingdom, and the United States.
Most recently, he served as the Executive Chef at Petit Robert Bistro in Boston, where he showcased his innovative culinary techniques and commitment to delivering exceptional dining experiences. With a passion for blending traditional flavors with modern creativity, Chef Stefano brings a global perspective to every dish he creates.
In 2023, Stefano opened his own restaurant, Via Cannuccia, an Italian trattoria in the Dorchester neighborhood, where he also lives. He pours his heart into every dish, whether it's fresh pasta, flakey croissants, or one of his five-course wine dinners. The restaurant’s immediate success is a testament to Stefano’s passion for food, community, and the joy of sharing a meal with others.

George
Via Cannuccia’s Operations and General Manager, George Whiting, is rooted in a lifelong passion for food, people, and culture. A proud Filipino American and current resident of Dorchester, he grew up surrounded by the warmth of family gatherings and the generosity of shared meals. George is a graduate of the French Culinary Institute in New York City, and cut his teeth in food service working in the Finger Lakes winery and fine dining industry. From there, George honed his craft through professional kitchens, catering programs, and large-scale event operations before stepping into corporate leadership roles. Whether directing catering at MIT Lincoln Laboratory or managing talent acquisition for Wizards of the Coast, George knows that leadership is all about centering on connection, teamwork, and excellence.
At Via Cannuccia, George blends operational rigor, a passion for amazing food, and heartfelt hospitality as he partners with Owner Stefano Quaresima and Executive Chef Simon Armen. With them, he helps guide the restaurant’s evolution: melding Italian tradition, local creativity, and neighborhood spirit. George brings an ethos of continuous improvement and strives to ensure that the whole Via Cannuccia team is delivering the best experience for our guests possible. George’s goal is for every meal to feel meaningful and for every guest to feel cared for, honoring his belief that hospitality, at its best, is a way to love your community.

We now have limited parking spaces available for our guests, after 4:00 PM.
To use one, please stop by the restaurant to pick up a parking sticker, place it in your window while parked, and return it to us after your visit.

We do not have a separate kids’ menu, but we have many kid-friendly options on our dinner menu, such as margherita pizza or pasta pomodoro. We also provide coloring activities and crayons to entertain your little ones while you wait for your dinner.
